My summer this year has been focussed around the kids’ athletics. It’s the flip side of them being actually quite good at their sport – it involves more parental commitment and more travel. I actually felt quite moved listening to swimmer Ellie Simmonds paying tribute to the support of her family, through being parent taxis to early morning training sessions and to competitions increasingly far from home, that got her to the Olympics.
Who knows if mine will get that far up the pinnacle of success. The eldest is currently part of the Welsh women’s U20 4 x 400m relay team that set a new national record in their age group a few weeks back.
On the food front, I’ve discovered a variation on pancakes that is gluten free, low carb, and packs a good vegetable portion: spinach pancakes. OK, if you’re not fond of spinach, call them green pancakes. If you season them nicely, you don’t taste the spinach. They are delicious served with twarog or cottage cheese and cherry tomatoes, but be creative and have them with whatever you fancy. There is no reason why you couldn’t treat them as sweet pancakes.



Recipe:
3 – 4 eggs (depending on size – my friend Wendy’s tiny bantams lay tiny eggs!)
1 very big handful spinach
100g or 1/4 cup ground almonds
ground black pepper to taste
1/4 teaspoon nutmeg
Blend all the ingredients in a blender and cook in batches on the hob. I use a little bit of coconut oil to grease the pan. Mine is a ceramic lined pan, so it is non-stick without worrying about the coating. Serve with cottage cheese and tomatoes. Or whatever you fancy.
